Responsibilities:

Within our kitchen located in Crissier, you ensure the preparation of meals for school canteens and nurseries.
You develop and cook meals in accordance with the Croq-Midi quality charter, the culinary production plan as well as food hygiene and safety rules, and ensure delivery deadlines are met.

Knowledge and skills.
Ability to work in a team and independently with rigour.
Good communication and organisational skills.
Sense of priorities, precision and responsiveness.
Knowledge of meal production techniques, preferably in collective catering.
Knowledge of culinary, pastry and cooking techniques.
Knowledge of preservation and packaging rules.
Knowledge of food weighing and dosing.
Knowledge of kitchen equipment operation techniques.
Knowledge of basic cooking recipes.
Knowledge of stock management rules.
Knowledge and mastery of hygiene and safety regulations.
Good mastery of handling gestures and postures.
Good mastery of maintenance and cleaning techniques for equipment, facilities and premises.

Main tasks:

Ensure the mise en place of hot and cold dishes with the team of cooks.
Prepare and carry out the cooking of fish and meats.
Prepare sauces, vegetables and starches.
Ensure optimal use of raw materials, presentation, taste and quality.
Receive and check goods and stocks in storage and cold rooms.
Ensure the application of food hygiene and safety rules.
Ensure the maintenance and cleaning of the workstation, equipment or kitchen, and utensils.
