Responsibilities:

  • Within our kitchen located in Crissier, you ensure the preparation of meals for school canteens and nurseries.
  • You develop and cook meals in accordance with the Croq-Midi quality charter, the culinary production plan as well as food hygiene and safety rules, and ensure delivery deadlines are met.

  • Knowledge and skills.
  • Ability to work in a team and independently with rigour.
  • Good communication and organisational skills.
  • Sense of priorities, precision and responsiveness.
  • Knowledge of meal production techniques, preferably in collective catering.
  • Knowledge of culinary, pastry and cooking techniques.
  • Knowledge of preservation and packaging rules.
  • Knowledge of food weighing and dosing.
  • Knowledge of kitchen equipment operation techniques.
  • Knowledge of basic cooking recipes.
  • Knowledge of stock management rules.
  • Knowledge and mastery of hygiene and safety regulations.
  • Good mastery of handling gestures and postures.
  • Good mastery of maintenance and cleaning techniques for equipment, facilities and premises.

Main tasks:

  • Ensure the mise en place of hot and cold dishes with the team of cooks.
  • Prepare and carry out the cooking of fish and meats.
  • Prepare sauces, vegetables and starches.
  • Ensure optimal use of raw materials, presentation, taste and quality.
  • Receive and check goods and stocks in storage and cold rooms.
  • Ensure the application of food hygiene and safety rules.
  • Ensure the maintenance and cleaning of the workstation, equipment or kitchen, and utensils.
