Sous-chef
Full-time position (100%)
Your main duties:
- Assist the Head Chef in organising, coordinating, and supervising the operation of the kitchen and pantry.
- Actively participate in the daily production of meals, ensuring their quality, variety, and nutritional balance.
- Plan, prepare, and supervise the creation of dishes adapted to the needs of residents, staff, and external clients.
- Participate in menu development respecting nutritional criteria and current labels (notably Green Fork).
- Ensure the plating of dishes and service in the dining room.
- Provide specific services during special events (aperitifs, receptions, internal functions).
- Manage orders, stocks, inventories, goods control, and monitor expiry dates.
- Ensure proper use and maintenance of kitchen equipment.
- Apply and enforce hygiene and food safety standards (HACCP).
- Participate in the supervision, oversight, and training of cooks and kitchen assistants.
- Cover for the Head Chef in their absence and guarantee continuity, quality, and good organisation of service.
Profile sought:-
- Training: Federal Certificate of Capacity (CFC) as a cook or equivalent training.
- Required experience: Minimum 5 years of professional experience, ideally in collective catering or institutions.
- Hygiene and safety: Excellent mastery of HACCP standards and hygiene rules.
- Technical skills: Good knowledge of modern production technologies.
- Additional knowledge: Some knowledge of dietetics is an asset.
- Organisation and responsibilities: Strong sense of responsibility and organisation.
- Supervision and collaboration: Ability to lead a team and work collaboratively.
- Flexibility and availability: Flexibility in work organisation and stress resistance.
- Personal qualities: Rigour, creativity, and constant concern for quality.
