Mandated by one of our clients, we are looking for:
Delicatessen Caterer
Mandatory CFC Delicatessen or equivalent
Very good knowledge of food safety standards
Minimum 2 years experience required
Experience in cooking is a plus
Meticulous, precise and rigorous
Good physical condition
Commercial awareness
Excellent presentation
French language mandatory, other languages an asset Main tasks:
- Ability to assess the quality of meat cuts, carve and prepare them.
- Manage cooking, smoking, brining and preservation.
- Good knowledge of hygiene and food safety standards (HACCP).
- Packaging, preparation of homemade products: sausages, pâtés, terrines, beef wellington
- Make terrines and pâtés en croûte
- Prepare cured meats (dried meat, bacon, hams, regional specialties), smoke, dry or cook the product to give it a particular flavour.
- Cook daily dishes and prepare ready-to-sell packaging
