Job Description

As part of this full-time Sous Chef role, you will work within a nursing home and report to the Restaurant Manager / Head Chef. As a true operational link in the kitchen, you actively participate in the daily organisation of production and the smooth running of services provided to residents, the establishment’s staff, as well as families and relatives.

You are responsible for preparing cold and hot dishes, cooking, as well as plating and dispatching meals in accordance with defined quality standards. You help ensure a neat presentation, impeccable consistency of preparations and execution adapted to the specific needs of a medico-social establishment.

You ensure the strict application of hygiene, food safety and traceability standards, maintaining a clean, organised work environment compliant with sector requirements. You are also attentive to the particular needs of residents, especially regarding modified textures, specific diets and services adapted to a nursing home population, to guarantee meals that are safe, balanced and enjoyable.

As the Head Chef’s right hand, you are required to ensure continuity of activity in their absence, notably during their holidays. You participate in coordinating the kitchen team, task distribution and monitoring production priorities, while maintaining smooth communication with other stakeholders in the establishment in an interdisciplinary spirit.

You use the necessary IT tools to monitor kitchen activities, organise daily operations and ensure proper administrative functioning related to production. Finally, you contribute to maintaining a professional, efficient and service-oriented working atmosphere in a structure serving about 150 covers per day with a morning or afternoon shift organisation, as well as one weekend out of three worked.

Profile sought

You hold a CAP / Vocational Baccalaureate in Cooking or a Federal Cooking Certificate and have proven experience in community catering.
You master culinary techniques, production volumes as well as the specifics related to modified textures and adapted diets.

Autonomous and rigorous, you are capable of replacing the Head Chef in their absence, organising production and ensuring compliance with HACCP standards.
Comfortable with IT tools, you demonstrate excellent service skills, a good team spirit and smooth communication in a demanding environment.
