TLML X offers a unique experience in the heart of the Alps, combining ski lifts, leisure activities, and spread across three areas, the company offers a wide range of activities and infrastructures, from skiing to fun spaces, including its restaurants. We are looking to complete our team with our future: Head Chef | buffet, self-service 100% H/F / Leysin - Restaurant Le Kuklos / Entry: immediately or to be agreed upon YOUR MISSIONS: Manage and develop the culinary production of Kuklos, in direct connection with F&B management. Ensure quality, consistency, profitability, and the proper functioning of the team. Design a profitable and smooth buffet. Manage high volumes regularly and optimize self-service flows. Develop simple, delicious, and easily reproducible recipes. Manage orders, stocks, inventories, and merchandise control. Master costs to reduce waste and optimize recycling. Establish standards, technical sheets, and plan menus according to events, the calendar, and the weather. Clearly structure positions and supervise teams. Support the team and ensure smooth operations during high traffic periods. Ensure an active presence in production, management, and customer service. Ensure strict compliance with HACCP standards, EcoBion procedures, and complete traceability. Evolve the offer through seasonal concepts and culinary projects in collaboration with F&B management. YOUR PROFILE: Holder of a chef's CFC or equivalent qualification. Proven experience in team management. Experience managing buffets and large volumes: experience in collective catering or cruising is a plus; experience in self-service is an advantage. Strong skills in cost and stock management. Strong ability to thrive in a fast-paced environment. Modern, organized, and respectful mindset. Flexible and available during peak activity periods (seasons, holidays).
