  • Proven experience in managing a catering/butchery activity
  • Strong managerial skills and ability to unite a team
  • Mastery of current legislation: hygiene, quality, safety, traceability
  • Organisational skills, autonomy, priority management
  • Strong affinity with the values of organic, fair trade and social and solidarity economy
  • Manage your team with a participative approach: skills assessment, delegation, conflict management, maintaining a good social climate
  • Manufacture and produce culinary and charcuterie preparations in compliance with shop standards
  • Structure and organise the catering production of the laboratory
  • Ensure the application of hygiene, safety and traceability rules
  • Animate the point of sale in line with the specifications and internal rules
  • Monitor performance indicators and drive a commercial dynamic
  • Coordinate team activities and ensure the transfer of know-how
