We are looking for a qualified and autonomous Sushiman M/F, passionate about the art of Japanese cuisine and possessing excellent technical skills.
Your Main Duties:

Cutting and preparation of fish: Filleting (salmon, tuna, sea bream, etc.), trimming, deboning and managing raw materials while strictly respecting the cold chain.

Mastery of Sashimi: Traditional and precise hand cutting, regular sizing and neat presentation.

Creation and rolling: Quick and consistent preparation of Makis, California rolls, Temakis and Nigiris.

Rice management: Seasoning, cooking and maintaining the sushi rice at the correct temperature.

Hygiene & Traceability: Strict application of HACCP standards (cleaning the work surface, maintenance of traditional knives, stock and expiry date management).
Desired Profile:

Experience: Minimum 2 years experience in a similar position (essential).

Technical skills: Speed of execution, high manual dexterity and perfect mastery of various knives.

Interpersonal skills: Rigorous, clean, organised and able to work under pressure (fast-paced / direct service).

Language: Fluent French.
