Job description
Within an organised brigade and under the responsibility of the Head Chef, the Chef de partie actively participates in the preparation and dispatch of dishes in compliance with the establishment's quality standards. Versatile, they are able to efficiently manage the various kitchen stations, notably the entremets, cooking and saucier stations, ensuring consistent and controlled production. They oversee mise en place, adherence to technical sheets and proper product management, paying particular attention to the finishing details of the plating. The Chef de partie also contributes to the smooth organisation of service by coordinating their work with colleagues and maintaining a steady pace during busy periods. They participate in compliance with current hygiene and food safety standards and are involved in stock management as well as waste reduction.
Profile soughtWe are looking for a professional with culinary training complemented by confirmed experience in a similar high-standard establishment. The ideal candidate has excellent mastery of classic and contemporary culinary techniques, with the ability to work across several stations with ease and rigour. Autonomous and organised, they know how to manage priorities while maintaining a high level of quality. Good stress resistance and a real capacity for adaptation are essential to succeed in this role with split shifts including weekends. Possessing a strong team spirit, the candidate must demonstrate impeccable professional behaviour and a positive attitude daily. Knowledge of HACCP standards is imperative, as is the willingness to commit long-term to a recognised establishment.
