To complete our team, we are looking for a: Sous Chef Pastry (M/F) Beau Rivage Palace Work location: Beau-Rivage Type of contract: permanent Responsibilities • You will manage the daily production of gourmet pastries as well as productions dedicated to banquets and events. • You will supervise the production teams at different stations and ensure the continuity of service in the absence of the head pastry chef. • You will establish and ensure compliance with quality standards, consistency, and regularity specific to a palace. • You will supervise the production of artistic pieces, mignardises, petits fours, ice creams, sorbets, and you will manage plate service, buffets, and banquets, ensuring fluidity, precision, and excellence. • You will supervise hygiene, cleaning of the premises, and organization of cold rooms, and you will manage stocks, inventories, and supplier orders. • You will develop and participate in cards, menus, and pastries with the kitchen brigade. Profile sought • You supervise and master all advanced techniques in pastry making, bakery, and ice cream making. • You lead a team with leadership, a sense of responsibility, and excellent managerial skills. • You establish a rigorous work organization and schedules according to activity forecasts. • You supervise the production of gourmet desserts for plate service, buffets, and prestigious banquets. • You manage the quality of customer service with a keen sense of detail, demands, and perfection. • You establish your legitimacy through a CFC or equivalent CAP and 5 to 7 years of experience in luxury hotel environment (4 or 5 stars) in a palace setting.
