Responsibilities Ensure the service of the oyster and seafood counter. Select, open, and present oysters, shellfish, and seafood. Ensure freshness, traceability, and strict compliance with hygiene standards. Intervene in traditional kitchen based on activity and service needs. Participate in production on cold and hot stations. Work with the Chef and the team. Requirements Confirmed experience as an Oyster Shucker in a brasserie or high-throughput restaurant. Mastery of traditional cuisine.
